Whole Grilled Snapper with Ponzu Sauce and vegetables Recipe
snapper 1.5 or 2lb
1 can of coconut milk
2 tbl grated ginger
1 tbl chopped garlic
1 bunch cilantro chopped
1 tbl fish sauce
Mix all ingredients in a bowl and coat the snapper, let fish marinate for at least an hour.
Heat grill. In another bowl add 1cup soy sauce, a little lime juice, 1 tsp of chop garlic, a splash of rice wine vinegar, fish sauce (you can chop cilantro, cashews and a diced jalapeno for garnish)
For the pickled vegetables, julienne a carrot, yellow onion, red or yellow pepper and a couple slices of jalapeno. Add a couple of splashes of rice wine vinegar let sit for 25 minutes.
Cook up some jasmine rice. Grill the fish about 10 minutes on each side.
Place fish on top of a pile of rice and top that with pickled vegetables and pour your Ponzu sauce over snapper and veggies… Enjoy and thanks, Dano…!
